The temperatures have gotten quite chilly. It would help if you had something to warm you up. A great way to do that is with a taste of Fall.

The pumpkin might be the icon of Fall, but butternut squash is the star. It’s a shower stopper. Sweet and Nutty. You can create so many delicious meals.

My last butternut squash haul at P&P produce in Northport. Everyone is so lovely and friendly. You will always find a smiling face at 2000 20th Avenue in Northport.

Now, I will admit that butternut squash is a beast to peal. It’s so worth it. This video from MyRecipes is a great way to learn how to peel and chop butternut squash.

My cousin-in-law, Victor Zeno with Spice and Advice, has a killer roasted butternut squash soup. Super easy too! It’s a hearty velvety delicious soup. The soup is creamy, warm, and will lift your spirits! Also, save the seeds and make roasted seeds. Be sure to add cayenne pepper for a bit of a kick. Click here for the full recipe.
