Around four months ago, Scott McBride got the idea for a vegan food truck, hoping to encourage people to try healthy alternatives in a fun and exciting way. Now, he's finishing wrapping up his first week in business and has served hundreds of customers in just three days.

The Black-owned, sci-fi themed truck, aptly named "Bean Me Up Scottie" has been serving their plant-based entrees in front of Crunch Fitness on McFarland Boulevard since Tuesday, and its catchphrase is "Fresh from the earth, tastes out of this world!"

The truck offers a variety of healthy food options that all feature out-of-this-world names, such as the Milky Way, a mac-and-cheese burger made from scratch, and the Pluto, a carrot bacon burger.

"It's a warming feeling seeing smiles on people's faces," McBride said of the immediate success of the truck. "It's so great to seem them take that first bite, give me a thumb's up and get right back in line."

McBride loves the atmosphere and the customers he finds at Crunch. In fact, it's where he works out himself. He said he was originally inspired to open the truck to honor his late mother by improving his eating habits, but it was the people working out with him that made him realize there should be an easily accessible way to eat healthily.

McBride's short term goal is to operate a second truck within six months. He also wants to add new recipes and ingredients, like cauliflower, as well as a menu for those with specific allergies like peanut oils.
